As I have recently been pondering replacing my ten year old generic Sabatiers and worn out honing steel this thread has been most useful-I've read it several times now and have been surfing around the net to pickup more info. As much as I might like to buy the Globals outlined by Pierre the Bear earlier in this thread or some I.O.Shens, or even Tojiros I doubt if I have the skills to keep them at their sharpest best. So what I think I'll do is buy a whetstone and a new honing steel and see if I can resurrect my Sabatiers and if successful decide what to do next from there. If my skills don't develop then rosewood Victorinox here I come.

One question though- I have come across the Tojiro SD range @ nipponkitchen.com. This range of knives are bevelled on one side only and is favoured by Japanese chefs

" to ensure when cutting, the food is not crushed by the angle of the blade" Notwithstanding if this is true, to sharpen only one side of the blade followed by a quick swipe

on a stone on the flat side would save a shed load of time. Any thoughts on this? ( Don't mean to start the equivalent of a cable war- honest!)

btw didnt know Bourdain had done a different series. 'Kitchen Confidential' is still one of my fav reads.

Always enjoyed preparing food and cooking and I've been using IO Shen knives for a while.

But I really fancied a quality one off damask style santoku, so I just bought one of these:
